Chef Peter Lute is ambitious, and rightly so. Certainly if the intention is to give vegetables the place they deserve, at the centre of every meal! The vegetarian restaurant Gastrobar Green in the Zuidas is therefore a bull's-eye. The chef is convinced that the future belongs to plant-based products and this is reflected in the fact that all culinary techniques are used to create balanced flavour combinations with respect for the ingredients.
