Gauthier
Alexis Gauthier, a classically trained French chef who had a Michelin star for 12 years, converted to vegan cuisine in 2016. That was no surprise. In 1997 he had already created a vegetable "garden menu" in his restaurant Roussillon, at a time when vegetables were still being treated in a step-motherly way. When he opened Gauthier in 2010, he knew from the start that vegetables would be the focus. When he won the "UK Best Vegan Menu Award", five years later his vegan menu "Les Plantes" became permanently available. Then refined preparations with intense flavours such as asparagus with morel and a gratin of garlic and brandy with watercress oil and also carrot tartare with coriander, sesame and avocado, umeboshi and olive oil.
