Ethica
Ethica stands for sustainable, local and homemade. The first 2 are obvious, homemade goes a long way to making its own beer, cheeses, kimchi, tempeh, miso, soy sauce and non-alcoholic drinks. Chef Robin Collard really finds his passion in this and wants to set Ethica apart from his colleagues in this way too. But he is certainly not alone; partner Joske Meijer also likes to lend a hand in the kitchen. On the menu, there is always a pure plant alternative, because that too is part of a better future!
