Air Republic is the now two-year-old fish brasserie by Sergio Herman, housed in a sleek glass pavilion on the Cadzand marina. The focus is on simple preparations with Zeeland products, with fish, crustaceans and shellfish in the lead, and classics from the repertoire of Sergio’s father. Such as the fish soup Oud Sluis, a classic plateau fruits de mer or fresh fish from the BBQ. The side dishes with vegetables are real gems.
