Yacon & carrot salad with sesame, lemon & coriander

Ingredients
- 2 carrots
- 1 large red Morado yacon
- A few carrot greens (tops)
- 4 sprigs fresh coriander
- Grilled sesame seeds, to taste
- A splash of sesame oil
- A splash of rapeseed oil
- 1 lemon (zest + juice)
- Freshly ground black pepper
- Coarse sea salt
Preparation
Yacon & carrot
- Peel the yacon and carrots, then slice finely using a mandoline.
- Cut into fine julienne strips lengthwise.
- Place in ice-cold salted water and let rest.
- After 30 minutes, drain and pat dry with kitchen paper.
- Toss with lemon zest and juice, sesame seeds, sea salt, and a generous splash of sesame oil and rapeseed oil. Let marinate briefly before serving.
Finishing
- Divide the salad over the plates.
- Garnish with fresh coriander, carrot greens, and, if desired, a few extra sesame seeds.
💡 Tip: Add a dash of soy sauce for an extra layer of flavour.
