Yacon & carrot salad with sesame, lemon & coriander

Ingredients

  • 2 carrots
  • 1 large red Morado yacon
  • A few carrot greens (tops)
  • 4 sprigs fresh coriander
  • Grilled sesame seeds, to taste
  • A splash of sesame oil
  • A splash of rapeseed oil
  • 1 lemon (zest + juice)
  • Freshly ground black pepper
  • Coarse sea salt

Preparation

Yacon & carrot

  • Peel the yacon and carrots, then slice finely using a mandoline.
  • Cut into fine julienne strips lengthwise.
  • Place in ice-cold salted water and let rest.
  • After 30 minutes, drain and pat dry with kitchen paper.
  • Toss with lemon zest and juice, sesame seeds, sea salt, and a generous splash of sesame oil and rapeseed oil. Let marinate briefly before serving.

Finishing

  • Divide the salad over the plates.
  • Garnish with fresh coriander, carrot greens, and, if desired, a few extra sesame seeds.

    💡 Tip: Add a dash of soy sauce for an extra layer of flavour.
