Christophe Naylor finds strength, creativity and inspiration in vegetables and herbs. Part of this comes from the 70 m2 garden that was installed in 2015 on the roof of the NH Barbizon Palace, the hotel in which Vermeer is located. On the fifth floor of the hotel are also three beehives that provide honey for the dishes. He processes vegetables and herbs in pure and honest preparations without embellishments, but always full of flavour.
