Gilbert von Berg is a chef of the world. Always in search of purity but open to all influences. If you want to enjoy the plant-based menu, you can, but you have to mention this when making your reservation. It is a pity that the plant-based menu is not automatically mentioned; in this day and age it is not an unnecessary luxury if you are aiming high in a contemporary restaurant.
