Château Neercanne

Château Neercanne is an institute in Dutch Limburg. The 17th-century baroque castle, close to the Belgian border, houses a renowned restaurant serving French-oriented dishes. Vegetables are given a creative interpretation and are processed generously, such as in the preparation of scallops where asparagus, morels and wild garlic go together, plentiful in the vegetable salad with avocado and string beans, and surprisingly with the goose liver where red cabbage kimchi provides the balance.
