Chef Michele Biagiola describes himself as "a vegetarian without wanting to be one". His love of vegetables is probably so great that he often forgets to bring animal products into the kitchen. The restaurant has a the spiritual name of "The Lord thanks you" and serves a large quantity of vegetables, mostly wild, harvested in the nearby mountains of the Marche region. The chef has written a beautiful book dedicated to spaghetti, his passion. In fact, one of his most famous recipes is 'spaghetti all'arrabbiata di erbe', a long roll of spaghetti flavoured with wild herbs that become increasingly spicy.
