Thierry Theys is a young kitchen talent who soon earned two Michelin stars. In his dishes, he manages to concentrate pure flavours, and he combines remarkable structures and textures in which there is always a distinctive acidic touch. With vegetables, he always brings special flavour accents and layering as in a combination of langoustine with beetroot and sumac and also cod with avocado, jalapeno and coconut milk.
