The flag covers the cargo: from the point of view of sustainability, many organic vegetables are used here. All products are chosen on the basis of the season, the full ground and the full sun. They come from farmers from the North Holland region or from their own vegetable garden in the nearby dune reserve. The fish species used are MSC approved and for chicken the organic Kemper Landhoen is used. Vegetarian dishes include puffed beet with granola of quinoa, wild rice, potato and cream of miso and black garlic or a vegan burger of soy and seaweed, with wakame, whey sauce, tomato and sweet and sour cucumber.
