The dishes of Mesa are inspired by the 'Tastes of the World' cuisine of the Tomorrowland dance festival, which has the same owners in common. Vegetables from passionate farmers and producers are fully discussed such as in a Peruvian ceviche of green cucumber including bok choy, tomato, and lime or in a series of side dishes with grilled sea bass including bulgur, lentils, cucumber and Greek yoghurt with parsley, crunchy onion, and spices.
