Gino Lemmens is a remarkable newcomer in Antwerp. He was immediately included in the selection of ‘Jong Keukengeweld’, an organisation of the Flemish Tourist board that brings together the best young chefs in Flanders. The products are optimally played out in his dishes, with pronounced flavours. Vegetables are not decoration, but they produce remarkable flavour contrasts. This is a chef to follow.
