Le Phebus by Xavier Mathieur is one of the many culinary temples in the region. But one where vegetables are appreciated. The vegetable menu was full of tasty regional products, brought in simplicity and with many aromatics. The tartar of zucchini was refined and the pistou heavenly. The creation of carrot, eggplant, green beans and zucchini flower was a delicacy also.
