Here, traditional Tuscan cuisine is given a makeover by making them lighter and more refined, while preserving the authentic flavours. On the menu are dishes such as eggplant pie and zucchini with crispy Tuscan bacon; papardelle with guinea fowl sauce and prunes; potato gnocchi with cherry tomatoes and asparagus and slow-cooked suckling pig with chard.
