The Kurhaus overlooking Lake Lugano is an inspiring environment for chef Franco Passoni. His Italian cuisine is creative with respect for tradition, but also internationally through the addition of spices and tasty ingredients from around the world. Examples of his dishes are a combination of risotto with artichoke, pesto of herbs and ricotta or grilled duck breast with pineapple and curry mustard sauce. He prepares lamb meat in a pistachio crust with hollandaise sauce with tandoori herbs, and he fills tortelloni with camembert, leek, tomato sauce and red onion.
