Chef Matt Ravenscroft - The Dirty Raven - brings an Italian plant-forward menu to Gia. Yes you can, it's not even really difficult, it's a matter of choices. Parmesan, butter and co do still come into play, but can also be omitted or substituted. So there is no difference in taste, and it is pure enjoyment. The drinks are great too. A real Italian topper to enjoy.
