Chef Anay Bueno only cooks plant-based, a considered choice. As a young restaurant owner and chef, he wants to make a statement and has, from day one, opted for more sustainability, more vegetables and more respect for the planet. By the way, the menu is completely vegan... and gluten-free! The restaurant name "Artichoke" is therefore deliberately chosen, also to indicate that he prefers local products.
