Alice Walters is one of the most important vegetable pioneers in the United States. She has been working for sustainability in food for years and was praised several times for this. The dishes in her restaurant Panisse are not 100% vegetable. Chef Amy Dencler determines the recipes and meat and fish are part of that. Do not expect complex creations but pure flavors. Vegetables certainly have a place in the menu. We give the 3 Radishes especially for the perseverance of Alice.
