An elegant setting, a light and refined cuisine and a serene and relaxed atmosphere make Brighton a true home for hedonists. French chef Laurent Gauze is mastering his seasonal products to perfection. His kitchen was certified as 'IN' (Intelligent Nutrition). There is a little fusion in his preparations; seasonal vegetables are always there. A surprise is the dessert with fruit ... and vegetables: cream of corn and green pepper, and a garnish with lime. He also makes beautiful combinations such as a lamb crown with herbs, chickpeas and beans or a lightly smoked gurnard with a lemon emulsion. A new wine cabinet was installed in the dining room. There are also very good wines available by the glass.
