Chef Xavier Aguado is an adept of pre-biotics in the kitchen. Plants are definitely his way to go, and you can see and feel that in everything that happens here at Bion Bo. There is daily cooking according to what the season brings but the choice is rather limited. We were impressed by how his creations tasted, seemed healthy and were presented in a playful manner.
