The kitchen of restaurant BAK is on the rise. You will find the restaurant on the third floor of the Veem warehouse that overlooks the IJ. Chef Benny Blisto works closely with artisan producers from the region and is above all a vegetable freak. Every year 80 kinds of vegetables and 50 kinds of herbs come from the country and the greenhouses from Wim Bijma, his vegetable godfather. In BAK you choose a five or seven course menu that always starts with a few vegetarian dishes and continues with remarkable combinations in which he unleashes all cooking techniques on vegetables. And he does better and better, hence an extra radish.
