Marinated kohlrabi ravioli with passion fruit and sweet chocolate-banana pesto
Ingredients for 4 servings:
- 1 large kohlrabi (fresh)
- 2 dl passion fruit juice (fresh or frozen)
- 2 tablespoons granulated sugar or a small amount of sugar substitute
- 1 ripe banana (fresh)
- 50 g dark chocolate
- 25 g cashew nuts
Preparation:
1. Prepare the Kohlrabi Ravioli:
Peel the kohlrabi and use a slicer to cut very thin, round slices (ravioli).
Combine the passion fruit juice with an equal amount of water and add the sugar. Heat the mixture, stirring until the sugar dissolves. Add the kohlrabi slices one by one into the warm juice and let them simmer gently on low heat for 2 minutes. Remove from heat, transfer the ravioli slices to another container, and pour some of the passion fruit coulis over them. Store in the refrigerator and allow them to marinate. Reduce the remaining juice to a coulis over low heat (be careful not to let it darken).
2. Prepare the Pesto:
Melt the chocolate and blend it with the banana and cashew nuts until smooth.
3. Assemble and Finish:
Per plate, prepare 3 ravioli. Place a spoonful of pesto on one side of each kohlrabi slice and fold the other half over to close. Arrange 3 ravioli on each plate and drizzle with the passion fruit coulis. Finish by grating some dark chocolate over the plates.
