In the south of the Netherlands, there is a charming little restaurant called Eyck 16.
The chef, Monique Moreau, is passionate about continuously learning how to make plants the centerpiece of every dish.
A small test kitchen allows her to experiment with techniques such as fermentation,drying, and creating a diverse range of oils, dressings, and basic plant-based cheeses.
Situated in an old farmhouse, the restaurant offers dishes rich in vegetables and fruits, with a small amount of animal protein to her customers' preferences.
Monique draws inspiration from nature: her small food forest with its vibrant wildlife, her garden filled with herbs, vegetables, nuts, and fruits, and the nearby River Maas, which flows almost through her backyard. The river nourishes the fertile soil.
She has also created a plant-based online course, essentially an online cookbook, featuring beautiful recipes and plenty of useful information.
