In the south of The Netherlands there is a little restaurant, Eyck 16. 

The chef, Monique Moreau, is very eager to still learn a lot about making plants the center of the plate.

A small testkitchen alows her to experiment with fermentation, freezing as a cooking skill, drying, making a diverse sort of oils, dressings and basic plant-based cheese.

In the restaurant, situated in an old farmhouse, she serves dishes with lots of vegetables and fruits and a very small amount of animal protien because of her costumers.

She gets inspiration from nature, her little foodforest and the animals that live in it, her garden with lots of herbs, vegetables,nuts and fruits. River "De Maas" flows almost in her backyard and gives the landscape her beauty, birds and provides also the soil for growing.

She also wrote a plant-based online course that's actually an online cookbook with beautifull recipes and a lot of information you love to know.
