Vegetables are more and more playing the leading role in Loïc Villemin's cuisine, complemented by wild plants and herbs, the fish of the day and animals from small local farms. With these super fresh products, he serves playful and creative preparations with pronounced flavours. Japanese influences are never far away and are a tribute to the land that inspires him.
