Roots

Roots is the new restaurant of the owners of The Black Swan in Oldstead where you can find a selection of small dishes with ingredients from the own garden. They work around three seasons: "The Preservation Season", "The Hunger Gap and ‘The Time of Abundance ". Based on this, the dishes change according to the availability of the ingredients. You can also find recipes built around these seasons in the book ‘Roots’ by chef Tommy Banks.
