Mil
MIL is a collaborative project led by Virgilio Martínez, Malena Martínez, and Pía León, which integrates cuisine with the scientific and cultural exploration of the Andean territory, with particular attention to plants, seasonality, and local ecosystem, alongside close collaboration with local communities and in connection with Mater. They wants to put the products from the Andes and Peru in the spotlight : "Back to the roots". We know the skill and perseverance of the chefs and their teams. The leading chef at Mil is Luis Valderrama Silva who always approached and finished the plates with perfection. Here too, you return to civilisation full of admiration and with a unique souvenir. Everything is meant to be appreciated in its purity.
