Restaurant La Paix of David Martin is still a neighbour of the slaughterhouse of Anderlecht, but is now also of 'Ferme Abattoir', a brand new urban vegetable garden of 4000m2, the largest in Europe, where tomatoes, herbs and aromatics are grown in aquaponics (with fish), on the roof of the FoodMet. The Michelin-starred chef continues to get his vegetables in the Pomona gardens in Anderlecht and from young mushroom growers, across the street from the restaurant, in the Cureghem cellars. For the rest you can go here for a particularly inventive kitchen, influenced by his many trips to Japan.
