Chef Pia León and her husband, Virgilio Martínez, put Lima's Central on the world culinary map. At her own restaurant, Kjolle, she continues to showcase the extraordinary diversity of Peru's natural pantry through a cuisine that is unmistakably her own. From the very beginning, she impressed us with her Experiencia Vegetariana—a pure plant menu celebrating greens, sprouts, aromatic herbs and edible flowers from her own garden, Amazonian citrus fruits, and native root vegetables rarely seen beyond Peru. In recent years, Chef Pia has developed an even more distinctive culinary identity at Kjolle. Her pure plant creations have become increasingly imaginative, refined and elegant, elevating the dining experience to new heights.
