Claus Meyer, the co-founder of Noma, and his Melting Pot Foundation, founded Gustu in 2013. With the restaurant he wanted to start a new Bolivian gastronomic movement and give underprivileged young people a purpose in life by teaching them how to cook. The restaurant is now an independent company that also has the culinary MANQA schools In “El Alto” of La Paz. Many of the students are now working in the restaurant and other restaurants in in La Paz and around Latin America. The Danish chef Kamilla Seidler, voted best chef of Latin America and an avid vegetable chef who also attaches great importance to sustainability, managed it till 2019, and openeds her own restaurant in Denmark, Lola with a social purpose.  Today, Marsia Taha Mohamed is the chef and manages Gustu. She created her own signature in the dishes, rich of vegetables and fruits from Bolivia. Wonderful are White Caiman Crudo, Sacha Inchi & Urucú,  Pine Mushroom, Potatoes & Fried Egg, or the delicious desert, Chirimoya Ice Cream, Hibiscus Merengue & Dried Flowers.  All products used, are local, nothing is imported.
