Pure and honest, Willem Schaafsma wants it. With (organic) products from personally selected gardeners from the Frisian country, he prepares pure, classic dishes with contemporary touches. In addition, vegetables are always the basis for a new preparation. Ask him for his favourite vegetables and he lists a catalogue per season. From his kitchen are dishes such as ceviche of perch, Jerusalem artichoke and Thai curry, langoustine with pork rib, smoked beet and apple gravy and Friesian roe with roasted celery, parsnip and szechuan gravy. This restaurant is also an ambassador of Dutch Cuisine.
