Clare Smyth was the first and still the only female chef in Britain to run a restaurant with three Michelin stars when she was the chef at the Gordon Ramsay flagship restaurant. In August 2017 she opened her own restaurant where she can indulge her passion for pure ingredients in elegant preparations. Vegetables almost always have priority over fish and meat, her vegetarian dishes also excel in refinement. In the preparation of "lamb carrot", for example, stewed carrots are the star and lamb the companion.
