Being vegan is in, especially in a metropolis like New York! But Chef Juan Pajarito Xaltepec knows how to handle it. Simplicity, a bit brutal, but always delicious.  When they started up in 2015, they were definitely "Avant Garde(n)" here, but in the meantime a lot has happened in the plant-based world. Don't stand still boys!
