White Mâche

Quickly stir-fried mâche with tuna,
grilled almonds, pomegranate seeds, and lemon balm.

Ingredients for 4 people:

  • 1 White mâche
  • 200 g natural tuna (can)
  • Half a pomegranate
  • 2 sprigs of fresh lemon balm
  • olive oil
  • white wine vinegar
  • 30 g sliced grilled almonds
  • white pepper from the mill
  • sea salt

Cut mâche into 6 cm sticks. Stir-fry briefly with olive oil, sea salt, and pepper.
Mix with tuna, almonds, some finely chopped lemon balm, and pomegranate seeds. Finish with a splash of vinegar and possibly some additional seasoning and olive oil.

Divide onto each plate. Enjoy warm or cold.

The Ideal Wine: Sautéed mâche calls for a red wine. In combination with the beetroot puree, ripe apricots, and roasted flavor of the rice, one might consider enjoying a chilled fruity red wine.
