Watercress jus with crisp asparagus, orange zest and bread croutons

Watercress jus
- 1 bunch of watercress
- juice of 1 orange
- olive oil
- freshly ground black pepper and sea salt

500 g asparagus
Garnish
- 2 thin slices of toast bread
- grated orange zest
- a few sprigs of watercress
Preparation
Asparagus
peel the asparagus and steam until tender yet crisp.
Watercress jus
bring lightly salted water to a boil. blanch the watercress, drain, and blend with a splash of olive oil and the orange juice. season with pepper and sea salt to taste.
Garnish
cut the toast into batons and grill until golden and crisp.
To finish
arrange the warm or cold asparagus on plates. spoon over the watercress jus, top with orange zest and finish with the grilled croutons.
Tip
Watercress is one of the most intense leafy greens, often used in salad mixes to add a bold, peppery note. don’t underestimate its power as a starring ingredient.
