Grilled red onion with spicy fresh cheese sauce
Ingredients for 4 people :
- 4 red onions with skin
- piece of red allspice without seeds
- 40 g diced red peppers
- 40 g diced cucumber
- 2 branches of finely chopped flat parsley
- 1 pressed clove of garlic
- a few seeds of cumin
- 160 gr low-fat fresh cheese
- smoked sea salt
- black pepper from the mill
Preparation :
Cook the onions for about 50 minutes on the edge of the BBQ. Prick with a needle to feel that they are cooked. The cooking time can vary according to the thickness of the onion. When sugar bubbles start forming on the outside, it is usually a sign that they are on point.
Let them rest off the heat.
Mix the cheese with the allspice, paprika, cumin, cucumber, garlic and parsley. Season with the smoked sea salt and pepper.
Finish :
Cut each onion in half and place them on each plate. Spoon in a hearty spoonful of sauce.
Tip:
Super delicious as a garnish with grilled lamb. This preparation also lends itself perfectly with shallots, possibly as an appetiser.
