Picea is the restaurant of the Burg Vital Resort, a five-star hotel with the charm of a luxurious chalet. "Nature is the architect of the kitchen," says chef Thorsten Probost. Just about all ingredients that he and his team process come from small-scale farms and growers. Thorsten describes one of his culinary concepts as vitalCOOKING. In it dishes with freshly prepared vegetables and herbs based on what nature makes available. All these dishes are gluten-free, without simple carbohydrates and with a low glycaemic index. This real natural kitchen is full of taste and finesse.
