The young artichoke has done it! Perfectly cooked, full of flavour and with a creative twist without sacrificing the basic product. We also tasted the stuffed soft-cooked shallot with beetroot. Vegetable chef Accursio deserves our attention, if only he got training from Pietro Leemann himself!
