Christiaen Souvereyns cooks light and creative and inspires the Mediterranean and Oriental cuisine. Vegetables play an important role as in his Thai salad with marinated beef, in his Japanese-inspired salad with cucumber coulis and hamachi tataki or in his aubergine parmigiana. Butternut squash and an ointment of sprouts and pears he serves with heart-shaped chicken fillet, and fish of the day is squeezed with tomato and a parmentier of leeks.
