Château Bethlehem is the "teaching hotel" of the Hotel Management School in Maastricht. It has 26 hotel rooms and the l’Etoile restaurant where students serve seasonal dishes with local ingredients. The majority of the recipes are also available in a vegetarian version. Such as quinoa spaghetti with Limburg white asparagus, egg cream and thyme honey vinaigrette or Alkmaar barley with green asparagus, goat cheese, turnip greens and crispy gremolata. Vegetables remain on the move in preparation of fried sea bass with bok choy and Beluga lentils and duck breast with mini-beet, corn cream and spice popcorn.
