In his restaurants, here in Birmingham and in Manchester, Damien Davenport brings a modern adaptation of vegetarian cuisine. He knows how to combine flavours without putting too much on the plate. He brings roasted cauliflower together with saté sauce, tamarind and pickled mango and combines oyster mushroom with buckwheat, miso chickpea puree, broccoli and black garlic. The dessert is also a surprise: lime with coconut puree and black sesame meringue. The name of the restaurant is the date the Vegetarian Society was founded. Indeed, so long ago.
