This fascinating concept is very simple: it is fast food with raw vegetables. There are powerful food processors on the bar, each making a particular salad combination. Each chop, mince, grate or cut the ingredients for the 9 different salads on the menu. To these, seasonings such as herbs, a vegetarian or vegan dressing and crispy elements such as pips, nuts and seeds are added. Animal proteins and additives are taboo. The concept existes since 2017 and was an instant success. And it still is!
