Spectrum is the new name for Librije's Zusje the restaurant of the Waldorf Astoria Hotel. This also ended the advisory role of Jonnie and Thérèse Boer, of the Librije in Zwolle. Nothing changes in the kitchen itself. Chef Sidney Schutte got the love of vegetables from the Belgian chef Roger Souvereyns when he worked in his Scholteshof. Vegetables play a major role in Sidney's sophisticated preparations. He can enjoy himself in the vegetarian menu. It contains preparations such as marinated watermelon with tomato, lime grass and horseradish, beetroot with dark chocolate, wasabi, pesto and green apple and also truffle with pumpkin, cream of apricot kernel, Jerusalem artichoke and truffle milk.
