Jonnie and Thérèse Boer continue their own course. Their style is averse to conventions, with a lot of humor and passion. From the very beginning, Boer has worked with vegetables and herbs from the immediate vicinity. In the greenhouses of Eef Stel, Boer has his own department where special herbs and special vegetables are grown, from lemon verbena to cardoon and from mini-vegetables to edible flowers of the East Indian cherry. The Librije menu consists of four colors. The customer chooses from each color a combination of ingredients that the chef further supplements with 5, 6 or 7 dishes. The green showpiece is the vegetable menu that includes dishes such as caper cheese with goat's cottage cheese, carrot and magnolia; cauliflower with coffee and almond; asparagus with coconut and lime leaf and kohlrabi with kefir and dill. The restaurant is housed in the old women's prison in Zwolle, where 19 hotel rooms are also furnished.
