Veronique Dewuld brings a pure kitchen, low in carbohydrates, gluten-free and seasonal in which vegetables, local products and fish from sustainable fisheries play a major role. Her dishes include a velouté of cauliflower with turnip, carrot, hazelnuts and old crumbled cheese, and silver whiting with celery, green asparagus, Jerusalem artichoke and dashi.
