Culinary Technique - Sabayon

Everything is possible with vegetables, even making a sabayon. For a surprising sabayon, replace the wine with vegetable juice or soup. Preparation is the same: egg yolks, sugar or vanilla sugar are mixed with the liquefied vegetables and whipped up into a frothy mix. For a savoury sabayon, skip the sugar. 

 

TECHNIQUE:

  1. Clean and wash the vegetables. Prepare a soup or put the vegetables through the juicer. 
  2. Proceed as you would for a regular sabayon and add the soup or juice.
