Culinary Technique - Blinis and Crêpes

Vegetable blinis are made by mixing vegetables into the batter. The vegetables aren’t coated in batter like for a tempura, but rather incorporated so as to form an actual vegetable batter that can be pan fried. The batter is made with eggs, flour and milk or cream, and can be seasoned to taste. It is then mixed with vegetable purée, soup or juice. 

TECHNIQUE:

  1. Clean and wash the vegetables. Cook them and drain them.
  2. Mash them and season them.
  3. Prepare the batter and add the vegetable purée.
  4. Cook small crêpes in a very hot pan or use special moulds.
